Pasta salad with herb dressing
Penne pasta 75 gm
Red capsicum thinly sliced 1 large
Cucumber sliced 1
Cherry tomatoes 250 gm
Green onions finely chopped 2
Green beans 100 gm
Toasted pine nuts 2 tbsp
Fresh herbs chopped 1/3 cup
Extra virgin olive oil 1/4 cup
White vinegar 2 tbsp
Salt to taste
Black pepper to taste
Boil pasta in salted water in saucepan by following instruction given in package.
Then add beans for last 3 minutes of boiling.
Then drain it, transfer to bowl and cool it.
Put fresh herbs, oil and vinegar in screw-top jar, close with lid and shake it.
Then add tomatoes, spring onion, pine nuts, cucumber and dressing in pasta.
Then sprinkle salt and black pepper, toss it and serve.
Cook pasta in a saucepan of boiling, salted water, following packet directions, adding beans for last 3 minutes of cooking. Drain. Transfer to a bowl. Cool.
Make dressing: Place herbs, oil, vinegar, mustard and cream in a screw-top jar. Secure lid. Shake to combine.
Add capsicum, pine nuts, onion, cucumber, tomato and dressing to pasta mixture. Season with salt and pepper. Toss to combine. Serve.
